si's been wanting trout with berry coulis for months. i guess it was finally time for me to make it....it worked. french thyme from my wee pot of herbs, sage, fresh garlic, walnut oil. black currents and strawberries for the coulis. french baton for the bread, and dark greens with goat cheese, tomatoes, pear, avocado, and cucumbers. we tried a german white. it was alright, but probably won't try it again...too sweet and not dry enough.
